Strawberry Lover's Pie

alternatively titled: The Best Strawberry Pie You May Ever Have



This is one of my favorite things to make. My best friend (and baking partner) Liz and I discovered this recipe last summer, and now we make it as often as possible. It's best when strawberries are in season of course, but this thing is so delicious it's a treat no matter what. I mean we get demands for this pie haha.

So let's get started!

Step 1: Your Pie Crust

Liz and I use an online pie crust recipe that is simple, with a great texture. It holds up well to all those delicious berries and syrup.

Only make half the recipe! As you can see, you only need the bottom crust for this pie. Once made, roll the crust out and place it in your pan. Then, make indents with your thumb across the top of your crust to give it that ruffle-y look. Finally, bake your crust for 15-20 minutes at 350 degrees, or until golden and slightly browned. :)

Step 2: The Strawberries!

For this pie overall, you'll want:

  • A quart and a half of strawberries


This part is simple. Take your quart and a half of strawberries and quarter them. You will need to save some of these berries for the filling, and for top decoration (optional), but the rest will simply go into the pre-baked crust.


Step 3: The Filling :D

So now you need:

  • 1 cup of mashed strawberries
  • 1 cup of sugar
  • 3 Tablespoons cornstarch
  • 3/4ths a cup of water
Start by combining your sugar and mashed berries in a saucepan over medium heat. Wait until this mixture boils, stirring frequently.

Combine the cornstarch and water.

When the strawberry-sugar mixture is boiling, gradually add your cornstarch-water mixture. 

Then, reduce the heat and let it simmer until the mixture is thickened. It will start to look somewhat like jelly, but slightly thicker. Approx. 10 minutes.

Step 4: Putting it All Together

Take your pie crust, with the quartered strawberries arranged inside, and pour your filling over the berries. Decorate with more strawberries on top if desired. Then, this pie goes in the fridge to chill for a few hours.
